Now that Fall is officially under way, so winter squash season here in Ontario. So many beautiful varieties to choose from; one of my personal favorites being butternut squash, especially baked in the oven as “fries”. Yes fries! They are delicious. True they don’t get quite as crispy as potato fries. That is because they are much less starchy and contain more water (they actually shrink quite a bit when baked). Not to mention the type of starch found in winter squash have antioxidant, anti-inflammatory, as well as anti-diabetic and insulin-regulating properties. Sounds like a win win situation!
With this recipe, the right seasoning (like my fav spice mix below) and cooking method, you can get your butternut squash fries pretty darn close in flavour to the real thing. Squash also beats out potatoes AND sweet potatoes hands down in terms of calories, carbs and sugar (see table below). And right now they’re in season, so head over to the market, stock up, and try these fries out.
* Make it a point to purchase certified organic squash as soils used for the growing of certified organic foods are far less likely to contain undesirable levels of contaminants
I’ve made these both as traditional rectangular fries and tater tots. They get crispier as tots since more surface area is exposed to baking – but both are delish.
Ingredients:
- 1 medium organic butternut squash washed well, pitted, cut in fries or 2cm cubes for tots (keep skin on – a key to adding crisp)
- 1 Tbsp vegetable or canola oil
- 3 Tbsp of my fav spice mix:
- 2 part chili powder
- 2 part paprika
- 1 part cumin
- 1 part garlic powder
- 1 part cinnamon
- 1 part cayenne (less if you’re not a fan of spicy – I looove spicy!)
- pinch of salt (to your liking)
* You can make a larger batch ahead and store for future recipes- also works great as rub for meat, burgers, or fish!
Directions:
- Preheat oven to 400 degrees
- Rinse squash well and pat dry.
- Mix squash, oil and spice mix in a bowl
- Spread in single layer on cookie sheet
- Heat on rack second to bottom for 1 hr, mixing and turning half way
- *Last 4 minutes (approx.) put on top rack and on broil. Keep an eye as you don’t want to burn them
