While the summer months are coming to an end there is still time to load up on fresh cool ingredients like a delicious salad loaded with super food goodness. This is one of my faves, and will keep you full and feeling healthy in and out!

* I often add a healthy lean protein to my salads. IIf you are vegetarian or vegan feel free to omit it the chicken or add your favorite non meat protein. You can certainly marinate tofu the same way but please look for organic and non-genetically modified (GMO) soy products. Remember soy is a large industrial crop that is heavily treated, which is why you want organic.

Salad Ingredients:

  • 1 bunch of kale – washed, chopped, and padded dry (remove thick stocks – as they taste bitter)
  • 1 zucchini spiraled.*
  • Handful of baby tomatoes
  • 1 medium raw beet peeled and sliced
  • Handful of goat cheese

*You can use a spiraler like the Paderno Turning Slicer. It is available at The Big Carrot and Rawlicious restaurant in Toronto. Mandolins may also have a slicing attachment. You can also just cut your zucchini slices thinly…no worries 🙂

Chicken  marinade (also used for salad dressing)

  • 2 small/med. chicken breasts.
  • 1/4 cup unpasturized honey
  • 1/4 cup dijon mustard – best is local, with least ingredients and no sulphites – such as  Anton Kozlik’s Canadian Mustard 
  • 2 Tbsp fresh minced ginger
  • 1 Tbsp apple cider vinegar

 Directions:

  • Mix marinade ingredients together. Leave 2 Tbsp aside for salad dressing
  • Marinate chicken in sauce for 1-2hrs. (if no time to marinate, brush sauce generously on chicken last 5 min of grilling on both sides)
  • Mix all salad ingredients together in a large serving bowl, except for goat cheese.
  • Grill chicken on BBQ or grill pan on Med Hi heat until juices run clear. (appx. 5-6min/side)
  • Remove from heat and let chicken sit to cool untouched 5-10 min.
  • Add 1 Tbsp of Extra Virgin Olive oil to dressing
  • Mix dressing into salad (adding more oil or vinegar if needed)
  • Cut chicken into even slices.
  • Portion out salad onto individual plates
  • Top each plate with a few slices of chicken and goat cheese (as desired).
