It is no secret that I love my protein packed breakfasts. My personal favorite is  oatmeal, as  it is easy to make, and you can blend almost any of your favorite ingredients to it. This allows you to create the correct macronutrient ratio depending on what your day ahead entails (ie protein, fats, carbs). The result keeps me energized, without feeling heavy- especially when I am almost always exercising first thing in the morning!

Oats can also be added to other recipes to add variety and of course tastiness, which we are ALL looking for!  So.. when I want to give myself a bit of a treat, I will make these tasty blueberry protein pancakes.
This super easy recipe was given to me by a fellow holistic nutritionist Connie Linton. I’ve actually gotten a lot of my own clients trying this (since most of the prep can be done the night before) instead of their usual predominately refined carb breakfasts. The reaction has been nothing but positive -especially when they realize how simple it is to prepare, not to mention delicious & nutritious! Give them a try, let me know what you think 😉

Ingredients:

Pancakes

  • 1/2 cup quick cooking oats
  • 2 eggs
  • 1tsp vanilla extract
  • cinnamon
  • 1/2 cup cottage cheese

Blueberry syrup:

  • 1/2 cup bluberries
  • squeeze of 1/2 lemon
  • pure maple syrup to taste

 Directions:

  • Blend pancake ingredients together w/ immersion (or regular) blender
  • Ladle desired portion in lightly greased skillet & cook on both sides until batter settles
  • Heat syrup ingredients in a pot on med heat and serve

(Note: Batter may be refrigerated overnight if you want to make ahead and just heat up the next day)
